    Exploring the Savory Delight of Beef Shatkhora: A Sylheti Culinary Gem

    Beef Shatkora, known internationally as Sylheti Beef, is a cherished dish within the Sylheti cuisine. This flavorful dish brings together a harmonious blend of rice, shatkora citrus, and succulent beef curry.

    The Sylheti Origins:

    Beef Shatkora finds its roots in the enchanting landscapes of the Sylhet Division. The region’s rich culinary heritage gave birth to this delightful dish, which has now gained recognition far beyond its place of origin.

    Hailing from the Sylhet Division, Beef Shatkora has transcended regional boundaries, capturing the hearts and palates of people both in Bangladesh and among the British Bangladeshi diaspora in the United Kingdom. Particularly during the festive occasion of Eid-ul-Adha, it stands out as a culinary icon. In the Sylhet division, both tourists from local community and other countries pays a visit to delve into this wonderful dish that is adorned by many due to it’s distinctive taste factor.

    The Citrus Twist:

    A Unique Flavor Profile feature that sets Beef Shatkora apart from other Bangladeshi curries is the inclusion of shatkora citrus. This zesty fruit infuses the dish with a remarkable taste and aroma that’s unlike any other. Shatkora citrus is native to the Sylhet region, where Beef Shatkora originated. It’s a small, round fruit that bears a resemblance to a lime or lemon but with distinct differences. The shatkora fruit is smaller in size and boasts a slightly bumpy skin, setting it apart visually.     Ingredients and Preparation: The creation of Beef Shatkora is an art in itself, requiring a careful selection of ingredients and a meticulous cooking process.

    Ingredients:

    • Vegetable oil
    • Cinnamon
    • Cardamom
    • Fenugreek seeds
    • Salt
    • Onions
    • Paste of garlic and ginger
    • Beef chuck
    • Chilli powder
    • Turmeric
    • Ground coriander and cumin
    • Garam masala
    • Shatkora
    • Tomato

    Procedure:

    1. Heat vegetable oil in a large, heavy-bottomed, non-stick saucepan.
    2. Add cinnamon, bay leaves, cardamom, star anise, and fenugreek seeds. Swirl them in the oil to release their flavors.
    3. Add beef, salt, spices, and green chilies. Stir well and cover.
    4. Cut the piece of Shatkora into wedges and then chop each wedge into small pieces.
    5. Add Shatkora pieces and some hot water to the curry.
    6. Bring the curry to a boil and then simmer for a while.
    7. Add chopped coriander and continue simmering until the meat is tender.

    Serving Suggestions:

    Beef Shatkora is typically served with glutinous rice or boiled white rice. A refreshing salad of cucumber, tomatoes, and onions often accompanies it as a side dish. Additionally, it pairs wonderfully with Polao, Khichuri, and Porota, offering a range of delightful dining experiences.
